1 TB Olive Oil

2 Lobster Tails, cooked and cut into chunks Claw Meat from Lobsters, cooked and cut

3 Strips of Bacon, chopped

1 Medium Onion, diced

2 Ribs of Celery, diced

1 Carrot, diced

3 Ears of Corn, shucked

4 TB Fresh Tarragon

1 TB Garlic, minced

1 cup White Wine (optional)

4 Red Potatoes (or Fingerling Potatoes), par-cooked and quartered

2 cups Heavy Cream

3 cups Shrimp or Lobster Stock

Salt and Pepper
