4 Chicken Breasts, skinless and boneless
8 strips Bacon, uncooked
6-8oz PepperJack cheese, cut into slices
Salt and Pepper for seasoning
Preheat half of your grill to Med-High and the other to Low.
Slice a pocket into the thick part of the chicken breasts and fill with slices of cheese. Season breasts with salt and pepper. Wrap breasts in bacon and secure with skewers. Spray lightly with spray oil and place on Medium-High grill. Grill until lightly charred on each side, then move breasts to Low side. Close lid and allow chicken to cook through about 8-12 minutes depending on the thickness of them.
Be sure to douse any flames with a spray bottle. When done, remove skewers and serve with Honey Mango Salsa.
Honey Mango Salsa
2 Honey Mangos, peeled and diced
1/4 Red Onion, diced
1/2 Red Bell Pepper, diced
1/2 Fresh Jalapeno, seeded and minced
1/2 cup Fresh Cilantro, rinsed and chopped
1 Lime, halved
Combine all ingredients except Lime in a mixing bowl and mix well. Squeeze lime halves over salsa and mix. Spoon over grilled chicken breasts.
