Balsamic Strawberries over Black Pepper-Lemon Shortcake with Fresh Whipped Cream

4c Strawberries, sliced
1/4c Sugar
3TB Balsamic Vinegar

2 1/2c All-Purpose Baking Mix (like Bisquick)
2/3c Milk
3TB Sugar
3TB Butter, melted
1/4tsp Freshly Ground Black Pepper
1TB Lemon Zest

1c Heavy Whipping Cream
1tsp Vanilla Extract
2TB Sugar

Marinate sliced strawberries in balsamic vinegar and sugar. Set aside.

Mix together baking mix, milk, sugar, butter, pepper and lemon zest until soft dough forms. Drop 1/2c scoops onto a greased sheetpan. Bake for 12-15 minutes, until golden brown.

In mixing bowl, whisk cream, vanilla and sugar until soft peaks form.

To assemble, break a shortcake in two and top with strawberries, then a dollop of whipped cream. Garnish with mint.
