Chef Kristian Neimi offers up a great dessert for Thanksgiving:
Pumpkin Pie Mousse
1 1/2cups whole milk
1 packet Instant Butterscotch pudding mix
1 cup canned pumpkin
1 tsp pumpkin pie spice
whipping cream
graham crackers
Combine milk, pudding mix, pumpkin and spices in a mixing bowl and mix well. allow to set; about 2 minutes. chill.
In a glass or parfait cup, layer 1-2TB crushed graham crackers, a scoop of mousse and top with whipped cream and some additional graham crackers and a light dust of pumpkin pie spice.
