(WLTX) - Here's a simple and delicious receipe for oyster stew.
5 slices of bacon, chopped
2 TB butter
1 cup onion, diced
1/2 cup celery, diced
1 tsp dried thyme
2 TB all-purpose flour
2 Bay leaves
1/4 cup flour
1/2 cup white wine
1 - pint of sucked oysters, juice reserved
1 cup fish stock or clam juice
1 cup whole milk
4 red potatoes, cooked and quartered
1 cup half and half
1/2 cup finely chopped fresh parsley
Tabasco (optional)
Worcestershire sauce (optional)
In a large skillet or small soup pot, over medium-hi heat, render the bacon until crispy. Remove bacon and reserve. Stir in the onions and celery. Add bay leaves and thyme and saute for 6 minutes, until the vegetables are tender. Stir in the flour and cook for 2-3 minutes, stirring occasionally. Whisk in the white wine, clam juice, milk and oyster juice and simmer for 5 minutes. Add oysters, potatoes and reserved bacon. Check seasoning and adjust as necessary with salt, pepper, Tabasco and worcestershire sauce. Garnish with parsley and serve.
